“Modern Winery Design – An Engineers’ Perspective”.

Gerard de Villiers is an Engineer based in Stellenbosch, South Africa, and has worked almost exclusively on the design of wineries and distilling processes since 1983. He specialise in the process design of the winery, which entails the flow of grapes, from the crush pad to the finished goods store. He is also a qualified Structural Engineer, and is often involved in the structural design of winery buildings.

He has been involved in the design of more than 150 wineries in South Africa, and in a number of wineries in the south of England, as well as in California.

Gerard and his wife, Libby, own a family winery outside Stellenbosch, and produces a Syrah and a Viognier, as well as Olive Oil.
